CHRISTMAS, BEST PAIRED WITH NYETIMBER
The traditional British delight – given a festive makeover for the season - offers a refined and indulgent experience this Christmas.
The Iconic Nyetimber Classic Cuvee
With a pale-golden hue and fine bubbles, the Nyetimber Classic Cuvee is the perfect way to elevate The Ivy’s Festive Afternoon Tea and turn it into a true celebration.
A sumptuous blend of Chardonnay, Pinot Noir and Pinot Meunier grapes, the flagship multi-vintage cuvee pairs beautifully with the smoked salmon in the choux bun and the delicate flavours in the Chicken Milanese and Lightly Curried Egg finger sandwiches. Its distinctive toasty and spicy aromas palate of honey, almond, pastry and baked apples is an elegant choice to sip alongside fluffy scones and indulgent desserts.
With light golden hues and a slight silver undertone, the Nyetimber Cuvee Chérie is a perfect pairing to our Cream Tea, served daily across The Ivy Collection. Aromas of pure lemon, mineral, honey and a hint of tangerine fill the nose whilst the palate has a lively, sweet lemon start offset by a crisp acidity and a very clean, pure structure.

NYETIMBER: WORLD-RENOWNED ENGLISH SPARKLING WINE
Their vineyards share similar characteristics with the best sparkling wine vineyards in the world. Greensand and chalk soils allow their vines, in each of their separate sites, to flourish across the south of England. The climate here allows for the slow ripening of our grapes, allowing them to achieve the optimum levels of ripeness and acidity, as well as the complexity and finesse for which their exquisite wines are renowned.
Using only estate-grown grapes from their own vineyards ensures that only the finest fruit is used to craft globally acclaimed Nyetimber wines. Their Head Winemaker, Cherie Spriggs, and her Winemaker husband Brad Greatrix assess each handpicked vineyard individually – from choosing the optimal time to harvest the grapes and supervising their gentle pressing to eventual vinification. This meticulous attention to detail allows them to make the most informed blending decisions the following spring.
In 2025, Cherie Spriggs was named ‘Sparkling Winemaker of the Year’ at the International Wine Challenge, having first been awarded the trophy in 2018. She was the first person to win this award outside of Champagne and is still the only woman to have done so.
They craft all their wines at Nyetimber according to the traditional method, ageing them for extended periods of time to build complexity and flavour, and allowing for generous post-disgorgement time before release.
